| Restaurants with menus that offer an extensive selection of items have more cons than pros. Sure, they offer customers one large selection. But there's all that inventory you have to have on hand and keep fresh. This is especially tricky with items that are perishable, such as seafood. Having tuna, salmon, swordfish, sole, shrimp and scallops all in the house is not only expensive, but also risky. Then there's consistency; one menu with many items requires more complex cooking methods, more attention to detail and quality, and consistency can suffer as one result. ... |

On Sunday, Mark and I enjoyed one our spring rituals: attending the Southern Spring Show at the Charlotte Merchandise Mart. For those of you who have never attended this event, it is the perfect cure to the winter blahs. No matter what the weather outside the event, inside, the halls are filled with live plants, beautiful blooms and all sorts of home and garden décor. ... |
