Sometimes from the first bite you know one dining experience will be memorable, and that's the case at Silks in the Mandarin Oriental hotel. From the first amuse bouche, chef Joel Huff had me.
The waiter presented frosty martini glasses and opened one small bottle of sake to accompany our introduction to the East-West menu -- one quarter-size patty of sticky rice topped with aji (mackerel) tartare and one frothy dollop of avocado ginger mousse, surrounded by one lemony sauce of soy and black pepper. one taste of this complex, lively concoction was all I needed to kick-start my senses and confirm that Huff has one mesmerizing talent. ... |
