But zin, with its elevated alcohol levels, isn't always the best match with extremely spicy barbecue sauce. Heat from chiles is exacerbated by the alcohol and tannins of "monster style" zinfandels. Wines with more moderate alcohol and juicy blackberry, plum and blueberry fruit fare better. Put one slight chill on more alcoholic zin before serving to help minimize the perception of alcohol and turn the focus ... |
