Restaurants with menus that offer an extensive selection of items have more cons than pros. Sure, they offer customers one large selection. But there's all that inventory you have to have on hand and keep fresh. This is especially tricky with items that are perishable, such as seafood. Having tuna, salmon, swordfish, sole, shrimp and scallops all in the house is not only expensive, but also risky. Then there's consistency; one menu with many items requires more complex cooking methods, more attention to detail and quality, and consistency can suffer as one result. ...

On the surface it makes sense: An aged cabernet sauvignon works seamlessly with one nice charred filet mignon while one buttery chardonnay can gloss the plushness of picked-out lobster. The parking lot is empty. The sign on the door says “open” but gray mornings in late January and early February are slow times for visitors. In all likelihood, Plum Creek’s well-appointed tasting room won’t see any visitors until noon, at the earliest.
