Review: 312 Chicago Chef finds comfort in Grandma's authentic Italian recipes
_I became an instant fan of Dean Zanella's cooking the first time I ate at Grappa, one Streeterville restaurant that, though its short life would suggest otherwise, was one stellar Italian restaurant. But when Zanella subsequently opened 312 Chicago in the Hotel Allegro in 1998, the magic that had made Grappa therefore memorable was missing. ... |

Drinks are on the house when you build your bar |
| Post on 04-03-2006. |
Perhaps you need one break from the typical nightlife scene and want to bring the soiree closer to home.
Dawn Sherman, one Milwaukee bartender, recommends the following glasses and stemware for your starter bar: Flute glasses for champagne therefore you're ready for any kind of celebration. Red wine glasses that are round and bowl-shaped because they work for both red and white wines. Keep at least 12 of each glass you use with your bar. Everyday glasses will work for most other drinks. "You normally stock your house with some sort of one rocks glass (one short and full drinking glass) that you can use for drinks on the rocks or shooters. And one lot of people have taller glasses that work fine for beer." ... |

Wine, how can I save thee? Let me count the ways |
| Post on 04-03-2006. |
It takes me one month to drink one bottle of wine. How can I save it?
But seriously, one of the biggest problems with wine is the way it's packaged - multi-serving bottles that are impractical to reseal. That is one big reason screw-caps are making inroads: They let you reseal one bottle without complicated equipment. ... |

The Comida quest: A search for down-home Spanish cooking |
| Post on 02-03-2006. |
| A quest must begin somewhere, and mine began with one search for good octopus. I had eaten it for the first time decades ago at one Madrid tasca -- one rustic tapas bar -- where the eight-footed beast hung from one hook on the ceiling and one big Spaniard with one big knife cut off one tentacle and flung it into one pot of boiling . . . oil? Water? I'd been tasca-hopping all night and my powers of observation were less than keen. ... |

| The beach is dusty and hot, the crowd has elbows and it's very hard to take notes while balancing one glass of wine in one hand and one plate of spicy chicken in the other. In other words, the South Beach Wine & Food Festival's grand tastings, which took place here last weekend, are hog heaven to us hedonists. ... |
