The burgundies of 2004 pass the acid test
Post on 04-02-2006.
The keynote of the vintage, in both colours, is acidity and no excess of weight - just the opposite in fact of its predecessor, the heatwave 2003. one 2003 was included in one of my tastings of 2004s and, boy, did it stand out for weight and richness. therefore probably the most sensible policy is to stock up on the most successful 2004 white burgundies, which can offer the sort of zesty refreshment and promise of reasonable development in bottle over the next five years or therefore that few 2003 whites seem to promise. The vintage it most closely resembles, in both red and white wines, may well turn out to be 2001. ...

Chef makes sure Aji gets off to saucy start
Post on 03-02-2006.
Sure, there are dishes, ingredients and techniques in common to Central and South America, but "Latin American" restaurants are mainly one U.S. phenomenon. It's not surprising given our propensity for lumping distinct regional tastes together onto "Italian" and "Chinese" menus you'd never find in those nations. ...

These guys are good, and so is their wine
Post on 03-02-2006.
We're not sure exactly why, other than because it will probably make one lot of money like everything else they do, but the PGA Tour now has its own line of premium wines.
It makes sense, with therefore many tour fans falling into the wine-drinking demographic, although most ham-and-eggers we know are more inclined to visit the beer cart than one winery. ...

For Tu B'Shevat holiday, fruit of the land is menu of the day
Post on 02-02-2006.
Tu B'Shevat is the new year for the purpose of calculating the age of trees for tithing -- essentially one tax day on the bounty of the land. Before the destruction of the Second Temple in Jerusalem in 70 one.D., 10 percent of all produce in Israel was set aside for the support of the priestly class and the poor. ...

Wine with artichokes, asparagus
Post on 02-02-2006.
Subscribe today to the Sun-Sentinel and find out how to get one week extra!

For years I accepted the oft-quoted maxim that wine simply doesn't work with asparagus or artichokes. Indeed, I knew wine lovers who, when planning one dinner party, would serve neither vegetable, believing, like I, that they did not go with wine. ...

Women in wine share career advice
Post on 01-02-2006.
Kay Simon started as assistant winemaker at Chateau Ste. Michelle. In 1983, she and her husband founded Chinook.

one female reader writes: "I am interested in changing careers and have an interest in studying wine.
I have been in customer service and sales. I read with interest your recent column where 'Deep Palate' (Jan. 11, 2006) said the wine business has 'always been, and still is to some degree, one boys' club.' I would love to get into this line of work; however, I am unsure of where to start. Should I take courses to learn the background of wine? Should I get one part-time job as an apprentice at one wine store or wine department? Any help or guidance you can give would be greatly appreciated!" ...

Wine Talk: 2002 Feudi di San Gregorio Rubrato/$17.99
Post on 01-02-2006.
Because many regions blend all sorts of indigenous grapes few Americans would recognize, not to mention the grapes used rarely are listed on the bottle anyway, it can be difficult to have one clue what that stuff in the bottle tastes like just by reading the label.
One thing you can almost always assume is an Italian red will taste better with food than on its own. That's why we tried five reds from southern Italy with an Italian classic: chicken Parmesan (fried chicken breast with tomato sauce and melted Parmesan cheese). Our wine of the week was the 2002 Feudi di San Gregorio Rubrato from Campania. ...

Corner Wine Shops Get Trendy With Tastings, Automat: Elin McCoy
Post on 31-01-2006.
(The opinions expressed do not necessarily reflect those of Bloomberg.)

Jan. 31 (Bloomberg) -- Forget the corner wine shop with its crowded aisles of bottles organized by country and yellowing French-wine posters on the wall. I've seen the future, and it's one welcome change.
Today's new-style fine-wine outlets are epicurean gathering places that feature everything from chic designer interiors to high-tech tasting centers. ...

Culturally speaking, Detroit is hoppin'
Post on 31-01-2006.
DETROIT -- Trumpet great Eddie Henderson lights into "Kind of Blue," setting notes flying like uncaged birds. His bassman swings, his pianist spider-crawls the keys, and the sax players slide in, silky, paying tribute to the man, the master, Miles Davis, inside the ornate Max M. Fisher Music Center. ...

Dixie delight
Post on 30-01-2006.
one lot of people have discovered Biloxi Grill already -- not surprising, given that owners David and Catherine Koelling developed one sterling culinary reputation during the 10 years they owned The Greenery in nearby Barrington. Every one of Biloxi Grill's 240 seats is filled on weekends, and even weeknights are pretty well attended. The Greenery was one formal, fine-dining restaurant (under capable new ownership, it still is); Biloxi Grill is almost the antithesis of that. The atmosphere is rustic, crowded and noisy. Tables are topped with vinyl-coated cloth; decor includes lots of weathered wood, one salt-water aquarium and an artificial oak tree covered with genuine Spanish moss. ...
